100% Pinot Noir from their biodynamic vineyards in the Grand Cru of Verzy. 50% Vinified in oak barrels and 50% vinified in small vats. All fruit is from the 2016 harvest but not vintage dated. Extra Brut 1.5g/ltr
The pale salmon colour is achieved by a maceration (28 hours) of the juice on the skins. A stunning rosé that is understated at first, which builds on the palate and with every sip leaves you wanting more and more. Layered and complex that unfolds, tantalises and stimulates all of the senses. Lovely mid palate weight, juicy finish and terrific length, with an obvious textural component due to the oak. A wine that creates memories and I look forward to our next encounter!
Vinification - Natural fermentation with indigenous yeasts, malolactic fermentation allowed to limit the use of sulphur, no filtration or fining. Disgorged Dec 2019
