Vibrant pale yellow cour, allow the wine to open in the glass as the lifted aromatics give creamy apple, sliced pear, marzipan, lemon curd and stirred lees notes, The palate underneath is powerful, complex and structured which continues to unfurl in the glass. Layers of wet stones, chalk, balanced by mineral, floral notes. The length of palate is unbelievable, filling the mouth with a depth of flavour and intensity. It is a wine to savour and let wash over you. This may be a flagship cuvee that few may currently be familiar with, however, I expect that in the future this will be discussed in the same reverential tones amongst the other greats of Champagne. 'Clos Le Léon' is an Extra-Brut Blanc de Blancs, vinified in 228 ltr oak barrels with a long, slow fermentation at just 12 C. The wine does not go through malolactic fermentation, sitting on the fine lees in barrel for seven months before being aged for a further seven years in bottle. Dosage is 3.5gms/ltr
